Tomato Spinach Rice Soup

I eat soup in any season, summer included. It’s a quick, filling addition to a meal plus it can tide my family over while I am still working on the main course. Since this soup seemed super quick to make, it was one of the first things I tried from Kosher by Design Short on Time.

Ingredients:

Crushed tomatoes, Tomato sauce, soup stock, onion, garlic, fresh spinach, sushi rince, basil, organo, chives

The Process:

As with almost any recipe, you start off by sautéing an onion and garlic. You then quickly add the tomatoes, juice, and other items and then let everything simmer. It really could not be much easier.

The Results:

Everyone loves this soup, everyone! Every time I make it there is not a single drop left. My mother in law repeatedly requests it. It also very filling since the sushi rice is substantial. This is one recipe that is as good as promised. The only time it has not turned out as desired is when I purchased a new brand of tomato sauce that was inferior.
